Can eggs really be vegetarian? Well, that depends on who you ask. For many ovo-vegetarians (vegetarians who consume eggs) the answer is a big yes. Eggs are a wonderful source of protein and nutrients. If they form part of your dietary lifestyle then you'll definitely enjoy these ideas for making vegetarian deviled eggs and other low-carb versions.

Basically, any deviled egg recipe can remain vegetarian as long as you omit meat-based ingredients like bacon, pork cracklings, sausage, ham or seafood. Instead, use flavorful add-ins like capers, truffles, avocados and even Chinese five-spice powder. Of course, these are just the tip of the iceberg!

LOW CARB DEVILED EGGS

Eggs are naturally low in carbohydrates so they are a great option for people watching their carb intake. The trick to low carb deviled eggs is to avoid using condiments that contain sugar (such as barbecue sauce or ketchup).

Stick to add-ins like cream cheese, sour cream, avocado, olives, horseradish, pesto, salsa, and mustard.

DEVILED EGG FILLING

Once you've mastered a basic deviled egg filling the flavor combinations are endless.

To get started simply hard boil six eggs, allow to cool and slice in half lengthwise. Scoop out the egg yolks and combine with:
  • 3 tbsp mayonnaise
  • 1/2 to 1 tsp Dijon mustard (depending on how tangy you like it)
  • 1/8 tsp of black pepper
  • a pinch of salt

Mix with a fork until all ingredients are combined. Pipe into the egg whites and serve. Garnish with a sprinkle of smoked paprika or fresh chopped herbs.

This is a basic vegetarian deviled egg recipe which you can enhance by adding any of the low-carb ingredients listed above.
