Beef stew is one of those classic recipes every serious cook should know how to prepare. Making beef stew isn’t an elaborate process. In fact, beef stew is one of those recipes that cooks low and slow, giving you lots of hands off time so you can relax while you wait for your meal.

BASIC BEEF STEW RECIPE

yields 4 servings

Ingredients

  • 1 lb (1/2 kg) beef cubes for stewing
  • 1 cup of red wine
  • 2 1/2 cups of beef or chicken stock
  • 2 tbsp flour
  • 2 carrots, cut in rounds
  • 2 celery stalks, sliced at an angle
  • 1 large onion, diced
  • 2 potatoes, quartered
  • 1 Bay leaf
  • 1 tbsp oil
  • Salt to taste
  • Pepper to taste
  • 2 tsp chopped parsley or cilantro

Preparation


1. Pull the meat out of the refrigerator 30 minutes prior to cooking.

2. Rinse the meat and pay dry with a towel.

3. Place the flour in a bowl and season the flour with salt and pepper.

4. Dredge the cubes of beef in the seasoned flour, dust off excess.

5. Heat oil in a large pot, add the pieces of dredged meat and brown on all sides.

6. Deglaze the pan with wine, scrape off brown bits from the bottom of the pan.

7. Add onions, carrots, celery and stock. Bring to a boil and lower to a simmer.

8. Cook on low heat until meat is tender, about 3-3 1/2 hours. To test for doneness: meat should easily fall apart when a fork is inserted.

9. Check the seasoning and adjust as needed. Add potatoes to the pot and cook for 20 minutes. Turn off heat and sprinkle with parsley or cilantro before serving. Enjoy!

Slow cooker version: After browning the meat place it in a slow cooker. Add the rest of the ingredients except the parsley. Cook on low for 8 hours. Adjust seasonings. Sprinkle with parsley before serving.
