CHEF TON TO COOK TWO EXCLUSIVE THAI DINNERS AT PHUKET'S PRU

Thailand has quite the spread of exciting guest chef dinners planned this November. Next up, following on from Antimo Merone's two nights at Rossini, is chef Thitid "Ton" Tassanakajohn from Le Du cooking two special S.Pellegrino sponsored dinners at PRU restaurant in Phuket on 17 and 18 November.

Chef Ton, who hails from Bangkok's Le Du, listed at 37 in Asia’s 50 Best Restaurants 2017, honed his skills in a number of US Michelin starred restaurants including Eleven Madison Park before returning home to open his own place. He's known for his field to fork cooking philosophy and will feel right at home in Pru's kitchen on the picturesque Thai island which boasts its own farm and use of seasonal ingredients.

Ton has put together a special menu for the occasion which sets out on a seafood theme with Thai inspired flavours. Poached oysters in Thai rice wine and green mango start the evenings dining, followed by pickled local sea bass served with Chiang Mai avocado, a course of grilled local crayfish with chu-chee curry, river prawn from Songkra Lake with Rayong-made shrimp paste and mountain rice. The main course is 30-days dry-aged beef served with charred eggplant and a coconut pannacotta and local mulberry dessert closes the night.

As a certified sommelier, the wine pairings have been given equal consideration and include: Blanc de Blanc Champagne, Chablis Vieille Vignes, Austrian Gruner Veltiner, a US pinot noir, a Bordeaux and an Austrian sweet wine for dessert.

Be sure to book a table in what looks set to be one of the most delicious events in the calendar this month.
