2018 looks set to be a busy year for René Redzepi, what with the opening of Noma 2.0, and now, it’s been announced, the release of the first of three new cookbooks, plus a food-focused biannual.
According to Eater, Redzepi will be releasing three new, technique-focused cookbooks after entering into a partnership with publishers Artisan. The first, due for release in October 2018 and co-written with Noma’s Director of Fermentation David Zilber, will be called Foundations of Flavour: The Noma Guide to Fermentation. The titles of the next two books have yet to be announced. Redzepi has previously released two cookbooks through Phaidon: Noma: Time and Place in Nordic Cuisine and René Redzepi: A Work in Progress.
The Danish chef will also be launching a biannual publication called Dispatches in September 2018. Edited by Lucky Peach co-founder Chris Ying, it will address the work done by his MAD non-profit and the issues raised at the annual corresponding food symposium in Copenhagen, with contributions from leaders across the food world.
Oh and he’s also just released a new foraging app. How does he fit it all in?
