If you’re an avid Chef’s Table fan you’ll know the story of Ana Roš and the restaurant Hiša Frankowell.

The Slovenian chef gave up a potential career in diplomacy for love, taking over the kitchen of her future husband’s unassuming family inn, in a remote valley in Slovenia close to the Italian border, turning it into one of the best restaurants in the world.

What makes the story even more extraordinary is that Roš had no formal training whatsoever, and did all of this whilst raising two children. This year, Roš was awarded the title of World’s Best Female Chef by the World’s 50 Best Restaurants.

It’s a story those gathered at the recent Food on the Edge symposium in Galway, Ireland were happy to hear, perhaps again or for the first time, as Roš opened proceedings with her own ‘food story.’

In it she also explains how the restaurant has adapted to its location in the hard to reach valley, which also overlooks the Adriatic, by seeking out local suppliers and balancing "land and sea" in the menu.
