MICHELIN GUIDE TO SHANGHAI 2018 – THE FULL LIST
The Michelin Guide to Shanghai 2018 has been unveiled, with the big news that chef Paul Pairet’s Ultraviolet restaurant has gained a third star.
The restaurant, which serves up a multi-sensory dining experience in a secret location to just 10 customers a night, went straight in at two stars in the inaugural Michelin Guide to Shanghai last year.
"It's truly unexpected. I was not sure that Michelin agreed with our very special format, but I am very happy and glad for our team,” said Pairet on learning of the award.
Ultraviolet joins T’ang Court in the city’s three star club. Elsewhere, the two stars are identical to last year, minus Ultraviolet, with the likes of L'Atelier de Joël Robuchon and Canton 8, the world’s cheapest two Michelin star restaurant, retaining their statuses.
20 restaurants were awarded one star, two more than last year, with four new entries, including Jean-George Vongerichten’s Jean-George.
Overall, Shanghai now has 28 starred restaurants, plus 27 Bib Gourmand recommendations for restaurants that offer great value for money.
