Fish en papillote is one of the most popular techniques, but you can also cook seafood, some meats, like chicken and vegetables en papillote. Simply choose the best herbs, seasonings and spices to go with your chosen main ingredient plus some olive oil or butter and a splash of wine or broth, before carefully sealing up the parcel to go in the oven.
