HOW TO COOK FRESH BEETS IN THE OVEN

Roasted beets are a wonderful treat because the vegetable's natural sweetness is enhanced by caramelization.

To roast beets: wash them, wrap in foil and roast at 400F for 40 minutes, depending on the size. Check for doneness by inserting a fork into the beet. Allow to cool slightly and peel off the skins. Slice and enjoy!

HOW TO COOK FRESH BEETS IN AN INSTANT POT

This is hands down our favorite way to cook beets. It is fast, efficient and the flavor is still great.

To cook fresh beets in the Instant Pot begin by washing the vegetables. Place the steamer rack in the Instant Pot along with 1 1/2 cups of water.

Place the beets on the rack. Press the manual button and set to 18 minutes for small to medium-sized beets and 22 minutes for large beets. Allow for natural steam release. Peel and enjoy!

HOW TO COOK FRESH BEETS ON THE STOVE

If you don't want to bother turning on the oven or don't have an Instant Pot you can always boil beets on the stovetop.

Peel the beets and cut into desired shape. Cover with water and add a pinch of salt, if desired. Cook on high until boiling then lower the heat and allow the beets to simmer until tender, about 12 minutes depending on the size of the chunks. Strain and enjoy!
