17 DISHES FROM FRANCE'S NEWEST THREE-MICHELIN-STAR RESTAURANTS
France has two new three-Michelin-star restaurants in the latest Guide, with both La Masion des Boisin Manigod in the French Alps and Restaurant Christophe Bacquié in Le Castellet, in the southern region of Var receiving the Red Guide's highest honour.
For chef Marc Veyrat, who has previously acheived the feat at two other restaurants (La Maison des Marc Veyrat in Veyrier-du-Lac and La Ferme de Mon Père in Megève), this success follows a period of adversity. Having been forced to give up cooking in 2011 after a skiing accident, he suffered another setback when, just three years ago, La Maison des Bois (meaning The Wood House) was gutted by a major fire.
Now Veyrat, who is rarely seen without his black Savoyard hat and is famous for his use of mountain herbs and plants, while foregoing staples of the French larder such as eggs, flour and cream, is back at the pinnacle of French cooking.
Joining him there is chef Christophe Bacquié, who’s restaurant at the Castellet Hotel in Var, in between Marseille and Toulose, overlloking the sea, serves a Modern Mediterranean menu, using almost entirely local products. Bacquié was recently a judge in the S.Pellegrino Young Chef regional final for France.
