15 DISHES FROM ITALY'S NEWEST THREE-MICHELIN-STAR RESTAURANT





The St Hubertus restaurant at the Rosa Alpina hotel in San Cassiano, in an area of Northern Italy known as the 'Door to the Dolomites,' may have been awarded its third star in the Michelin Guide to Italy 2018, but its origins are humble: it started life as a pizzeria.

Indeed, it was only with the arrival of chef Norbert Niederkofler in 1996 that a more ambitious cuisine was attempted. Having grown up and cooked in the region, and in the US, Niederkofler had a vision. The first star for his ‘Mountain Gastronomy’ arrived in 2000, the second in 2007. And finally now, in 2017, the third. Hubertus is the patron saint of hunters, and for this chef and restaurant, the stake out for Michelin's highest honour was a long one.
