MEAT TIPS: HOW TO COOK THE PERFECT STEAK FLORENTINE
Wondering how to prepare and grill the famous steak Florentine? Here are some tips and tricks from Italy's most famous Tuscan butcher, Dario Cecchini, on how to maximise the deliciousness of one of the Tuscany's most famous dishes.
HOW TO COOK THE PERFECT STEAK FLORENTINE:
1. Prepare a wood-fire grill until it's very hot. You'll know the temperature is ready for cooking when the metal of the grill turns white.
2. Make sure the grill is close to the embers. When the metal begins to glow, cook the Florentine steak for five minutes on each side and then 15 minutes "standing up".
3. In the meantime, keep a tray warm where you can then let the meat rest for three minutes once it’s finished cooking. This is the best way to ensure that the meat will release all of its juices and flavours, becoming even tastier.
4. At this point, all that’s left to do is taste and then season with salt as desired.
