Aran Island shrimp, pelled - 20
Sea lettuce - 5g
Buttermilk - 50ml
Cream - 50ml
Parsley oil - 15ml

- Combine the buttermilk and cream and season with a little sea salt.
- Season the shrimp with salt and vinegar.
